Vegetarian skewers
  • 2 tablespoon sun-dried tomato pesto
  • 1/4 cup lemon juice
  • 2 tablespoon olive oil
  • 1 small_piece red onion, quartered
  • 1 green capsicum (bell pepper), coarsely chopped
  • 6 vegetarian sausages, thickly sliced
  • 125 gram (4 ounces) cherry tomatoes, halved
  • 100 gram (3½ ounces) ciabatta bread, coarsely chopped
  • 8 cherry bocconcini cheese
  • 125 gram (4 ounces) halved cherry tomatoes

    Combine tomato pesto, lemon juice and olive oil in small bowl. Thread 1 quartered small red onion, 1 coarsely chopped green capsicum (bell pepper), 6 thickly sliced vegetarian sausages and 125g halved cherry tomatoes alternately, onto eight bamboo skewers. Thread 100g coarsely chopped ciabatta bread, 8 cherry bocconcini cheese and another 125g halved cherry tomatoes, alternately, onto four skewers. Brush skewers with pesto mixture; cook on heated oiled barbecue (or grill or grill plate), brushing with pesto mixture, until skewers are browned lightly. Drizzle skewers with remaining pesto mixture.
