Method

1.Combine tomato pesto, lemon juice and olive oil in small bowl. Thread 1 quartered small red onion, 1 coarsely chopped green capsicum (bell pepper), 6 thickly sliced vegetarian sausages and 125g halved cherry tomatoes alternately, onto eight bamboo skewers. Thread 100g coarsely chopped ciabatta bread, 8 cherry bocconcini cheese and another 125g halved cherry tomatoes, alternately, onto four skewers. Brush skewers with pesto mixture; cook on heated oiled barbecue (or grill or grill plate), brushing with pesto mixture, until skewers are browned lightly. Drizzle skewers with remaining pesto mixture.
