1.Cook cutlets on a heated oiled barbecue grill plate.
2.Meanwhile, finely grate 1 teaspoon rind from orange. Squeeze juice from orange (you need ¼ cup juice).
3.To make salsa, combine rind and juice in a medium bowl with remaining ingredients; season to taste.
4.Serve cutlets topped with salsa.
