Veal cordon bleu

The perfect example of classic French bistro-style food; ham and cheese, sandwiched between tender veal, then crumbed and fried to perfection.

Ingredients

Method

1.Top 4 pieces of veal with a slice each of ham and cheese (cut to fit). Top with second piece of veal. Press firmly to seal.
2.Dust prepared steaks lightly with flour, shaking off excess. Dip into combined milk and egg.
3.Coat with crumbs, pressing them on firmly. Transfer to a plate and chill for at least 20 minutes.
4.Heat oil and butter together in a large frying pan on medium. Add steaks. Cook for 2-3 minutes each side, until golden. Drain on paper towel. Serve with salad, or vegetables of choice.
