2.To make marinade, using a blender, blend tomatoes, basil, olives, oil, garlic and reserved sun-dried tomato oil for about 1 minute, or until combined.
3.In a large shallow bowl, combine marinade and chops; cover, refrigerate for 3 hours or overnight.
4.Drain chops, discard marinade; cook chops on a heated oiled barbecue (or grill or grill pan) over medium heat for about 3-4 minutes each side, or until cooked through.
5.Serve chops with lemon slices.
Not suitable to microwave. Not suitable to freeze.
