Turkish halloumi and pomegranate salad

The tart, exotic flavours in the salad are enhanced by the creamy, nuttiness of the fried halloumi cheese. A wonderful combination.

Ingredients

Turkish halloumi and pomegranate salad
  • 1 tablespoon lemon juice
  • 2 tablespoon light olive oil
  • 1/3 cup pomegranate pulp
  • 1/4 cup firmly packed fresh mint leaves
  • 2 green onions, sliced thinly
  • 125 gram mizuna
  • 1 medium_piece fennel, trimmed, sliced thinly
  • 360 gram halloumi cheese, sliced thickly

Method

Turkish halloumi and pomegranate salad

    Combine juice, oil, pulp, mint, onion, mizuna and fennel in large bowl.

    Brown cheese, both sides, in large oiled frying pan. Serve salad topped with cheese.

Notes

You will need one large pomegranate for this recipe.
