Take a different approach to making pizza with this Turkish bread vegetable pizza recipe. Loaded with healthy vegies, and quick to make, it makes a fab mid-week dinner.
1.Cook zucchini, eggplant, kumara, capsicum and mushrooms on heated oiled flat plate, uncovered, until tender.
2.Cut bread into quarters; split each piece in half horizontally. Brush cut-side of each bread piece with combined pasta sauce and pesto. Divide grilled vegetables, tomato, olives and cheese among bread pieces.
3.Cook pizzas on heated oiled flat plate, covered, until bases are crisp and cheese melts.
