Turkey rissoles with spinach rice

Turkey rissoles
  • 500 gram turkey mince
  • 1 red onion, finely chopped
  • 1/4 cup cranberry sauce
  • 2 tablespoon chopped parsley
  • 1 tablespoon oil
Spinach rice
  • 3 rashers rindless bacon, finely chopped
  • 4 green onions, finely sliced
  • 2 garlic cloves, finely chopped
  • 1/2 lemon, finely grated zest and juice
  • 3 cup cooked rice
  • 60 gram baby spinach leaves

    Make the rissoled. In a bowl combine mince, onion, sauce and parsley. Season. Form into 8 patties.

    Heat oil in a large frying pan on high. Cook patties for 3-4 minutes each side until cooked through. Drain on paper towel and keep warm.

    Make the rice. Heat a large frying pan on medium. Cook bacon until crisp. Stir in onions, garlic and lemon. Cook 2-3 minutes until tender. Add rice. Cook, stirring, for 3-5 minutes. Remove from heat. Stir through baby spinach leaves and season to taste. Serve with patties.
