Turkey burger with cranberry onions
  • 375 gram minced turkey
  • 3 green onions, chopped finely
  • 1/3 cup fresh flat-leaf parsley, chopped coarsely
  • salt and freshly ground black pepper, to season
  • 4 bread rolls, halved
  • 8 oak-leaf lettuce leaves
  • 1 (150g) medium tomato,, sliced thinly
  • 4 (80g) swiss cheese slices
Cranberry onions
  • 1 tablespoon olive oil
  • 1 (300g) large red onion, sliced thinly
  • 2 tablespoon red wine vinegar
  • 1 tablespoon light brown sugar
  • 2 tablespoon cranberry sauce

    To make the cranberry onions: In a medium frying pan, heat oil over medium heat; cook onion, stirring occasionally, for about 10-15 minutes, or until onion is soft. Add vinegar and sugar; cook, stirring, for about 5 minutes, or until caramelised. Stir in sauce; remove from heat.

    Meanwhile, in a medium bowl, combine turkey, onion and parsley; season. Using your hands, shape mixture into four patties.

    On a heated oiled barbecue (or grill or grill pan), cook patties for about 12 minutes, or until cooked through. Remove; cover.

    Toast rolls, cut-side down, on barbecue. Sandwich lettuce, tomato, patties, cheese and onions between rolls. Serve.


You can melt the cheese for each burger, if you prefer.
