Ingredients

Tuna rice cake
  • 2 teaspoon olive oil
  • 1 brown onion, finely chopped
  • 2 clove garlic, crushed
  • 2 cup white medium-grain rice cooked
  • 425 gram flaked tuna can, drained
  • 310 gram can corn kernels, rinsed, drained
  • 4 green onions, thinly sliced
  • 3 beaten eggs
  • 1/2 cup gouda cheese, coarsely grated

Method

    Heat 2 teaspoons of olive oil in a deep 20cm frying pan, cook 1 finely chopped brown onion and 2 crushed garlic cloves until onion softens. Combine onion mixture with 2 cups cooked white medium-grain rice, tuna corn kernels, green onions and beaten eggs in a large bowl.

    Heat same pan, add rice mixture, press down gently. Sprinkle with gouda cheese. Cook, covered, 10 minutes. Preheat grill, grill about 10 minutes or until browned lightly.
