1.Arrange prawns on serving platter. Cover and chill, until required.
2.Mayonnaise: in a food processor or blender, process yolks, juice and mustard, until smooth. While motor is running, gradually pour in oil in a thin stream. Process until thick. Season to taste.
3.Herb aioli: Combine all ingredients in a small bowl. Season to taste.
4.Capsicum and caper mayonnaise: in a food processor or blender, process all ingredients until smooth. Season to taste.
5.Serve prawns with sauces.
For a spicy taste, add tabasco to capsicum and caper mayonnaise. Add more lemon juice if mayonnaise is too thick.
