Trail mix
  • 1 cup (140g) roasted salted peanuts
  • 1 cup (160g) natural almonds
  • ½ cup (70g) whole skinless hazelnuts
  • ½ cup (100g) pepitas (pumpkin seed kernels)
  • 1 cup (50g) flaked coconut
  • 2 extra-large egg whites (60g eggs, each), beaten lightly
  • 45 grams packet lemon and herb dukkah
  • ½ tsp table salt
  • ¼ cup (40g) currants


Trail mix

    Preheat oven to 180°C. Line two large oven trays with baking paper.

    Combine nuts, pepitas and flaked coconut in a large bowl.

    Combine egg white, dukkah and salt in a small bowl; add to nut mixture. Stir until well combined. Divide mixture between trays in a single layer.

    Bake for 10 minutes. Sprinkle each tray with currants; bake
    for a further 8 minutes or until browned lightly and fragrant. Cool on trays. Separate trail mix into small clusters. Transfer to an airtight container.
