Tomato salsa

Serve this fresh and nutritious tomato salsa with corn chips or atop crusty toasted sourdough, bruschetta-style. It is even more delicious when topped with crumbled feta.

Tomato salsa
  • 3 medium tomatoes, seeded, finely chopped
  • 1 small avocado, finely chopped
  • 1 medium red onion, finely chopped
  • 2 small red thai chillies, finely chopped
  • 2 tablespoon coarsely chopped fresh coriander
  • 130 gram can corn kernels, rinsed, drained
  • 1 tablespoon lemon juice
