Tomato and sweet chilli relish

This relish recipe is best served with grilled meat, sausages, or on hamburgers and sandwiches.

Its spicy sweetness is tempered with vinegar, which also serves to intensify the natural flavour of the tomatoes.
If you just can't get enough of tomato relish, we also have a spicy green tomato relish or a sundried tomato version.

Ingredients

Tomato and sweet chilli relish
  • 2 teaspoon olive oil
  • 1 red onion, chopped finely
  • 800 gram ripe tomatoes, chopped coarsely
  • 1/2 cup (125ml) sweet chilli sauce
  • 1/2 cup (110g) white sugar
  • 1/4 cup (60ml) red wine vinegar
  • 2 teaspoon kosher salt

Method

    Heat oil in large saucepan; cook onion, stirring, until soft. Add remaining ingredients; cook, stirring, over high heat, without boiling, until sugar dissolves.

    Bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 40 minutes or until relish is thick.

    Spoon hot relish into hot sterilised jars; seal immediately. Label and date jars when cold.
