  • 4 large ripe tomatoes, thinly sliced
  • 1 eschalot, peeled and finely chopped
  • 8 basil leaves, roughly torn
  • 2 tablespoon extra virgin olive oil
  • 2 teaspoon balsamic or wine vinegar

Method

Tomato and basil salad

    Arrange tomato slices on a serving platter. Scatter with eschalot and basil. Drizzle with oil and vinegar. Season to taste before serving.
