Tofu and avocado dressing
  • 150 gram silken firm tofu
  • 1 small_piece (200g) avocado
  • 1/2 teaspoon lemon juice
  • 1/4 cup (50g) cottage cheese
  • 2 tablespoon mayonnaise
  • 1 1/2 teaspoon chicken stock powder

    Press tofu between two chopping boards with weight on top, raise one end and stand 25 minutes.

    Mash avocado with juice until smooth. Cut tofu into chunks, add to avocado mixture with cottage cheese and whisk until combined. Whisk in mayonnaise and powder. Season to taste.


It is important to use silken tofu for this recipe to get the right texture.
