Ingredients
Toffee apple slice
- 3/4 cup (110g) potato flour
- 3/4 cup (120g) brown rice flour
- 1 teaspoon bicarbonate of soda (baking soda)
- 1 cup (220g) firmly packed light brown sugar
- 3 medium apples (450g), peeled, cored, grated coarsely
- 3 eggs
- 3/4 cup (180ml) vegetable oil
Walnut praline
- 3/4 cup (165g) caster (superfine) sugar
- 2 tablespoon water
- 1/2 cup (55g) finely chopped roasted walnuts
Apple icing
- 2 cup (320g) icing (confectioners') sugar
- 1/4 cup (60ml) apple juice, approximately
Method
Toffee apple slice
- 1Preheat oven to 180°C. Grease 24cm x 32cm swiss roll pan; line base and long sides with baking paper, extending paper 5cm over sides.
- 2Sift dry ingredients into large bowl; stir in apple, eggs and oil. Pour mixture into pan.
- 3Bake slice about 30 minutes. Stand slice in pan 10 minutes before turning, top-side up, onto wire rack to cool.
- 4Meanwhile, make walnut praline: Stir sugar and the water in small saucepan over low heat until sugar dissolves. Bring to the boil; boil, uncovered, without stirring, about 10 minutes or until toffee is a caramel colour. Remove from heat; allow bubbles to subside. Place nuts in single layer on baking-paper-lined oven tray; pour toffee all over nuts. Stand at room temperature until set. Chop praline finely.
- 5Spread slice with icing; sprinkle with praline. Serve.
