Thrifty Greek pasta

Ingredients

Thrifty Greek pasta
  • 375 gram small spiral pasta
  • 1 tablespoon olive oil, plus 1 tbsp extra
  • 250 gram lamb mince
  • 1 clove garlic, crushed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried mint
  • 1/2 teaspoon dried thyme
  • 1 red onion, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 1 zucchini, finely chopped
  • 1 tablespoon red wine vinegar
  • 3/4 cup pitted kalamata olives, halved
  • 150 gram greek feta, crumbled
  • 1 cup parsley leaves, plus extra to serve

    In a large saucepan of boiling salted water, cook pasta following packet instructions. Drain, reserving ¼ cup cooking liquid. Return to pan and keep warm.

    Meanwhile, in a large frying pan, heat oil on high. Cook mince for 4-5 minutes, breaking up lumps until evenly browned. Stir in spices and herbs and cook for 30 seconds.

    Add onion, capsicum and zucchini. Saute for 2-3 minutes until vegetables are tender. Remove from heat, stir in vinegar and season to taste.

    Toss sauce through hot pasta with reserved cooking liquid, olives, crumbled feta and parsley. Serve topped with extra parsley leaves.
