Love to make that traditional Christmas cake but find yourself without the time as the 25th draws nearer? Prepare our three-in-one basic fruit mix up to one month in advance and tastes even better without the stress of hurried baking.

When you’re done baking this fruit cake you can move onto a Christmas pudding or fruit mince pies.

Any leftover cake can be enjoyed as a delicious Christmas breakfast with strawberries.

Ingredients

Method

1.Preheat oven to 140°C (120°C fan forced). Line base and side of deep 20cm (8-inch) round cake pan with 1 layer of brown paper and 2 layers of baking paper, extending paper 5cm (2 inches) over edge of pan.
2.Place basic fruit mix in large bowl. Stir in butter, eggs and sifted flour and baking soda.
3.Spread mixture into pan, level top. Bake about 2½ hours. Brush hot cake with brandy. While still hot, cover cake, still in its pan, tightly with foil, then wrap in a towel and cool overnight.
