The best rocky road
  • 400 gram coarsely chopped turkish delight
  • 300 gram coarsely chopped white marshmallows
  • 1/2 cup chopped blanched almonds, toasted
  • 1/2 cup shelled pistachios
  • 1/2 cup mixed glace fruit of choice
  • 1/3 cup shredded coconut, toasted
  • 450 gram white eating chocolate, melted
  • 50 gram milk chocolate, melted, to drizzle

    Lightly grease two 8 x 26cm bar cake pans. Line base and sides with baking paper, allowing paper to extend 2cm above the edges.

    In a large bowl, combine Turkish delight, marshmallows, nuts, fruit and coconut.

    Pour white chocolate over and stir to coat. Divide mixture evenly between pans and press down well. Chill until firm.

    Drizzle with milk chocolate. Allow to set. Cut into pieces.


Use milk or dark chocolate for filling if preferred. You can also make this rocky road in a 22cm square cake pan.
