This Thai chicken noodle soup is full of all those lovely and distinctive Asian flavours and will not fail to please. Best of all, you can be enjoying a steaming bowl in under 15 minutes. What's not to love?
1.In a small bowl, combine chicken and curry paste.
2.Rinse noodles under hot water; place in a medium microwave-safe bowl with chicken mixture and stock. Microwave, uncovered, on HIGH (100%) for about 2 minutes, or until hot.
3.Sprinkle with coriander and onion before serving.
