  • 1/2 cup (80 grams) burghul
  • 1 1/2 cup firmly packed fresh flat-leaf parsley leaves, finely chopped
  • 2 medium tomatoes, halved, thinly sliced
  • 1/3 cup (80 millilitres) lemon juice

Method

    In a large heatproof bowl, place burghul; add ½ cup boiling water; cover, stand 5 minutes or until water is absorbed.

    Add parsley, tomato and lemon juice; toss to combine.
