Swiss chard omelette

Swiss chard omelette
  • 1 cup roughly chopped swiss chard, or silverbeet
  • 2 tablespoon finely sliced red onion
  • 4 eggs, lightly beaten
  • 2 tablespoon cream or milk
  • 1/4 cup feta, crumbled
  • chopped flat-leaf parsley, to serve

    Preheat oven grill. Heat a little olive oil in a small frying pan and sauté Swiss chard or silverbeet and red onion until wilted.

    Whisk together eggs, cream and a little salt and pepper and pour over greens. Top with feta and cook for 2–3 minutes on a medium heat. Place under grill until golden. Sprinkle with parsley, then serve.
