Ingredients: 2 large oranges; 1 telegraph cucumber; 2 cup loosely packed fresh mint leaves; 1/4 cup (60ml) avocado oil; 1 tablespoon finely grated lemon rind; 1 tablespoon lemon juice; 2 teaspoon honey; Honey lemon dressing; 1/4 cup avocado oil; 1 tablespoon finely grated lemon zest; 1 tablespoon lemon juice; 2 teaspoon honey

2 large oranges

1 telegraph cucumber

2 cup loosely packed fresh mint leaves

1/4 cup (60ml) avocado oil

1 tablespoon finely grated lemon rind

1 tablespoon lemon juice

2 teaspoon honey

Honey lemon dressing

1/4 cup avocado oil

1 tablespoon finely grated lemon zest

1 tablespoon lemon juice

2 teaspoon honey

Method

Sweet cucumber and orange salad

1.Segment oranges over small bowl; reserve juice.

2.Use vegetable peeler to cut cucumber into thin ribbons. Place cucumber in medium bowl with mint, orange segments, reserved juice and dressing; toss gently to combine. Season to taste.

Honey lemon dressing

3.Place ingredients in screw-top jar; shake well.

Traditionally served as an accompaniment to spicy dishes, this recipe would also make a great light vegetarian starter.
