Summer spaghetti with pea pesto and ham

A simple pesto of baby peas, herbs, Parmesan, and garlic tossed through tender spaghetti with salty leg ham makes for a light and satisfying summer pasta dish.

Summer spaghetti with pea pesto and ham
  • 500 gram spaghetti
  • 2 cup frozen peas
  • 2 clove garlic
  • 1/4 cup roasted pine nuts
  • 1/2 cup loosely packed fresh basil leaves
  • 1/3 cup loosely packed fresh mint leaves
  • 1/2 cup flaked parmesan cheese
  • 2 tablespoon olive oil
  • 200 gram finely sliced leg ham
  • 1/3 cup lemon juice

    Cook pasta in large saucepan of boiling water until just tender; drain.

    Meanwhile, microwave peas on HIGH (100 per cent) about 2 minutes or until tender; drain. Blend or process peas with garlic, nuts, herbs, cheese and oil until mixture forms a thick puree.

    Combine pea pesto, ham and juice with pasta in large bowl.
