Sultana bran muffins
- 125 gram low-fat creamed cottage cheese
- 1/2 cup brown sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1 1/2 cup self-raising flour, sifted
- 2 cup sultana bran breakfast cereal
- 1 cup low-fat milk
- 1/2 cup finely chopped pitted dates
Method
Sultana bran muffins
- 1Preheat oven to moderate, 180°C. Line a 12-hole muffin pan with paper patty cases or spray with oil.
- 2In a large bowl, using an electric mixer, combine cottage cheese, sugar, eggs and vanilla.
- 3Lightly fold in flour, 1 1/2 cups sultana bran cereal, milk and dates.
- 4Spoon mixture into cases until two-thirds full. Sprinkle tops with remaining cereal.
- 5Bake 20-25 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes. Transfer to a wire rack to cool completely.
Notes
Test muffins with a skewer - if it comes out clean and dry, they are cooked. These muffins are best served warm.
