Ingredients

Sultana bran muffins
  • 125 gram low-fat creamed cottage cheese
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup self-raising flour, sifted
  • 2 cup sultana bran breakfast cereal
  • 1 cup low-fat milk
  • 1/2 cup finely chopped pitted dates

    Preheat oven to moderate, 180°C. Line a 12-hole muffin pan with paper patty cases or spray with oil.

    In a large bowl, using an electric mixer, combine cottage cheese, sugar, eggs and vanilla.

    Lightly fold in flour, 1 1/2 cups sultana bran cereal, milk and dates.

    Spoon mixture into cases until two-thirds full. Sprinkle tops with remaining cereal.

    Bake 20-25 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes. Transfer to a wire rack to cool completely.

Notes

Test muffins with a skewer - if it comes out clean and dry, they are cooked. These muffins are best served warm.
