Method
1.Preheat oven to moderate, 180°C. Line a 12-hole muffin pan with paper patty cases or spray with oil.
2.In a large bowl, using an electric mixer, combine cottage cheese, sugar, eggs and vanilla.
3.Lightly fold in flour, 1 1/2 cups sultana bran cereal, milk and dates.
4.Spoon mixture into cases until two-thirds full. Sprinkle tops with remaining cereal.
5.Bake 20-25 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes. Transfer to a wire rack to cool completely.
Test muffins with a skewer – if it comes out clean and dry, they are cooked. These muffins are best served warm.
