Sugar-free sultana muffins

These light and fluffy muffins are naturally sweetened with dried sultanas, making them a perfect healthy lunchbox snack for school and work.

Ingredients

Method

1.Preheat oven to 200°C. Line 18 muffin pan recesses with paper patty cases.
2.Sift flours, baking powder and cinnamon together into a bowl. Stir in sultanas, carrot and zucchini. Make a well in centre of mixture.
3.In a large jug whisk yoghurt, milk and eggs together. Pour into well and lightly mix to combine. Spoon mixture evenly among cases. Sprinkle with cinnamon, if liked. Bake for 25-30 minutes, until cooked when tested with a skewer.
