Ingredients
Stir-fried choy sum
- 1 tablespoon peanut oil
- 1 fresh long red chilli, thinly sliced
- 2 clove garlic, crushed
- 2 centimetre (10g) fresh ginger, grated
- 1 kilogram choy sum, trimmed, cut into 5cm lengths
- 2 tablespoon fish sauce
- 2 tablespoon lime juice
- 1 cup (150g) roasted unsalted cashews
Method
Stir-fried choy sum
- 1Heat oil in wok and stir-fry chilli, garlic and ginger 1 minute.
- 2Add choy sum and stir-fry until almost tender. Add sauce and juice, then stir-fry until hot.
- 3Serve stir-fry sprinkled with nuts.
Notes
Buk choy and gai lan can also be cooked this way.
