Ingredients

Stir-fried choy sum
  • 1 tablespoon peanut oil
  • 1 fresh long red chilli, thinly sliced
  • 2 clove garlic, crushed
  • 2 centimetre (10g) fresh ginger, grated
  • 1 kilogram choy sum, trimmed, cut into 5cm lengths
  • 2 tablespoon fish sauce
  • 2 tablespoon lime juice
  • 1 cup (150g) roasted unsalted cashews

Method

Stir-fried choy sum

    Heat oil in wok and stir-fry chilli, garlic and ginger 1 minute.

    Add choy sum and stir-fry until almost tender. Add sauce and juice, then stir-fry until hot.

    Serve stir-fry sprinkled with nuts.

Notes

Buk choy and gai lan can also be cooked this way.
