Sticky pork spare ribs

In a pressure cooker these sticky and saucy pork spare ribs can be whipped up in no time.

Method

1.Combine ribs and the water in 6-litre (24-cup) pressure cooker; secure lid. Bring cooker to high pressure. Reduce heat to stabilise pressure; cook 15 minutes.
2.Meanwhile, combine remaining ingredients in large bowl. Preheat grill (broiler).
3.Release cooker pressure using the quick release method; remove lid. Drain ribs; combine with marmalade mixture. Place ribs, in single layer, on oiled wire rack over large shallow baking dish filled with 1cm (½ inch) water.
4.Grill ribs about 8 minutes or until browned, turning halfway through cooking time and brushing occasionally with remaining marmalade mixture.

If you have an electric pressure cooker you won’t need to reduce the heat to stabilise pressure, your cooker will automatically stabilise itself. Always check with the manufacturer’s instructions before using.
