Sticky pork and noodle stir-fry

Plum-marinated pork rashers add a gorgeous sweet, sticky flavour to this colourful noodle stir-fry. Made with just five ingredients, this delicious dish is one to try on busier weeknights.

Sticky pork and noodle stir-fry
  • 500 gram pork rashers
  • 375 gram jar sweet plum marinade
  • 400 gram packet stir-fry veggies
  • 4 centimetre piece ginger, peeled, finely sliced
  • 440 gram egg noodles, cooked following packet instructions

    Preheat oven to 180°C. Line an oven tray with baking paper.

    Place pork in a single layer on tray. Roast for 20 minutes, turning halfway through. Drain off excess liquid.

    Reserve 2 tablespoons of the marinade. Pour half of the remaining marinade over rashers. Bake for 25-30 minutes, basting with remaining marinade every 10 minutes, until caramelised. Cut into chunks.

    Heat an oiled wok on high. Stir-fry veggies and ginger for 4-5 minutes until tender. Add noodles and reserved marinade. Toss.

    Add pork, tossing well. Serve sprinkled with toasted sesame seeds and shredded green onions, if liked.
