Sticky banana and date muffins
  • 455 gram packet banana muffin mix
  • 1 cup finely chopped seeded dried dates
  • 1 1/3 cup water
  • 1/2 cup brown sugar
  • 1/2 cup cream
  • 40 gram butter

Method

    Preheat oven to 200ºC/180ºC fan-forced.

    Grease 12-hole (⅓ -cup/80ml) muffin pan.

    Place banana muffin mix in large bowl; stir in dates then water. Divide mixture into pan holes; bake about 20 minutes.

    Combine brown sugar, cream and butter in small pan; stir over low heat until smooth.

    Simmer until sauce thickens slightly.

    Stand muffins in pan 5 minutes before turning, top-side up, onto wire rack to cool. Serve muffins with sauce.
