Ingredients

Sticky apricot & lime ribs
  • 1 kilogram american-style pork spare ribs, cut into pieces
  • 1 cup (320g) apricot jam
  • 1 cup (250ml) water
  • 2 tablespoon finely grated lime rind
  • 2 tablespoon lime juice
  • 2 tablespoon soy sauce
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder
  • 1 teaspoon dried chilli flakes
  • 1 teaspoon ground cumin

Method

    Place ribs in a large saucepan with enough cold water to cover. Cover; bring to the boil. Reduce heat to low; skim away impurities from the surface. Simmer, covered, 45 minutes. Drain.

    Combine remaining ingredients in a large bowl, add ribs; turn to coat. Cover; refrigerate at least 2 hours or overnight, turning occasionally.

    Preheat oven to 200°C.

    Place ribs and marinade in a large baking-paper-lined dish; season. Roast 1 hour, turning and brushing every 15 minutes with pan juices. Cut into individual ribs to serve.

Notes

You will need about 2 limes for this recipe.
