Spinach mash
  • 1 kilogram potatoes, coarsely chopped
  • 220 gram trimmed spinach leaves
  • 40 gram softened butter
  • 1/2 cup hot pouring cream

    Boil, steam or microwave potatoes until tender, drain. Meanwhile, boil, steam or microwave trimmed spinach leaves until wilted, drain. When cool enough to handle, squeeze out excess liquid. Blend or process spinach with butter until almost smooth. Mash potato in large bowl, stir in cream and spinach mixture. Season to taste.
