Ingredients
1 brown onion (150g), chopped coarsely
2 clove garlic, crushed
2 tablespoon tomato paste
800 gram canned chopped tomatoes
3 cup (750ml) chicken stock
1 teaspoon sambal oelek
400 gram uncooked medium king prawns
400 gram canned white beans, rinsed, drained
100 gram green beans, sliced thinly
1/3 cup coarsely chopped fresh coriander
Method
1. Combine onion, garlic, paste, undrained tomatoes, stock and sambal oelek in 2.5-litre (10-cup) rice cooker; secure lid. Cook, stirring occasionally, 30 minutes.
2. Meanwhile, shell and devein prawns.
3. Add prawns and all the beans to rice cooker; secure lid. Switch to ‘keep warm’; stand about 5 minutes or until prawns change colour. Stir in coriander; season to taste.
