Spicy couscous salad

A delicious side dish of spicy couscous salad packed with pine nuts, red onion, currants and harissa.

Ingredients

Spicy couscous salad
  • 1 cup (250ml) chicken stock
  • 2 cup (500ml) water
  • 3 cup (600g) couscous
  • 1/3 cup (50g) pine nuts, roasted
  • 1 red onion (100g), chopped finely
  • 1/2 cup (75g) dried currants
  • 1/3 cup each coarsely chopped fresh mint and flat-leaf parsley
  • 2 teaspoon harissa
  • 1/3 cup (80ml) lemon juice
  • 1/3 cup (80ml) olive oil

Method

    Bring stock and the water to the boil in medium saucepan.

    Combine couscous and hot stock mixture in large heatproof bowl, cover; stand about 5 minutes or until liquid is absorbed, fluffing with fork occasionally.

    Stir nuts, onion, currants and herbs into couscous.

    Make harissa dressing. Place ingredients in screw-top jar; shake well.

    Just before serving, pour dressing over couscous; toss gently.
