Spiced chicken pizza

Spiced chicken pizza
- 1 tablespoon extra virgin olive oil
- 1 medium (150g) onion, chopped
- 250 g chicken mince
- 35 g taco seasoning
- 2 wholemeal pizza crusts
- 1/4 cup (90g) tomato passata
- 1 medium (200g) red capsicum, sliced thinly
- 1/4 cup (60g) sliced pickled jalapeno peppers
- 1/2 cup (100g) light sour cream
- 1/4 cup finely chopped coriander
Method
Spiced chicken pizza
- 1Heat oil in a medium frying pan over a medium heat and add onion. Cook, stirring, for 2 minutes or until softened. Add the mince and seasoning. Cook, stirring, for 10 minutes or until mince is browned and cooked through.
- 2Meanwhile, preheat oven 200°C (180°C fan-forced). Place the pizza bases onto oven trays lined with baking paper. Spread tomato passata over the bases; top with the chicken mince mixture, red capsicum and jalapenos. Bake for 15 minutes or until browned lightly.
- 3Serve with combined sour cream and coriander.
Notes
Unbaked pizzas suitable to freeze.
Not suitable to microwave.
