Soft pastrami tacos

Flavoursome, easy and ready in just 10 minutes, these tasty soft shell tacos are perfect for lunch.

Ingredients

Soft pastrami tacos
  • 8 flour tortillas, warmed
  • 60 gram baby spinach leaves
  • 400 gram pastrami, thinly sliced
  • 420 gram can corn kernels, drained
  • 200 gram baby cucumbers, sliced lengthwise
  • 175 gram punnet mini capsicums, thinly sliced into rounds
  • 1 red onion, thinly sliced
  • 1 cup grated tasty cheese
  • 2 tablespoon chilli sauce
  • 1/2 cup extra-light sour cream

Method

Soft pastrami tacos

    Top tortillas with spinach, pastrami, corn, cucumbers, capsicum, onion and cheese.

    Fold in half. Drizzle with chilli sauce. Serve with sour cream.

Notes

To heat tortillas, microwave, in batches, on High (100%) in 30-second bursts until warmed.
