Smoky beans with chorizo

Rich and smoky Spanish-style beans with chorizo make an easy dinner or tasty breakfast idea.

Smoky beans with chorizo
  • 1 red onion (300g)
  • 1 red capsicum (350g)
  • 1 cured chorizo sausage (170g)
  • 2 teaspoon smoked paprika
  • 800 gram canned borlotti beans
  • 800 gram canned crushed tomatoes
  • 2 tablespoon coarsely chopped fresh flat-leaf parsley

    Peel and coarsely chop onion. Coarsely chop capsicum and chorizo.

    Heat oiled large saucepan; cook onion, capsicum and chorizo, stirring, until vegetables are tender. Add paprika; cook, stirring, until fragrant.

    Meanwhile, rinse and drain beans. Add beans and undrained tomatoes to pan; bring to the boil. Reduce heat; simmer, uncovered, about 5 minutes or until sauce has thickened slightly. Season to taste.

    Serve sprinkled with parsley.
