Smoky beans with chorizo
- 1 red onion (300g)
- 1 red capsicum (350g)
- 1 cured chorizo sausage (170g)
- 2 teaspoon smoked paprika
- 800 gram canned borlotti beans
- 800 gram canned crushed tomatoes
- 2 tablespoon coarsely chopped fresh flat-leaf parsley
Method
Smoky beans with chorizo
- 1Peel and coarsely chop onion. Coarsely chop capsicum and chorizo.
- 2Heat oiled large saucepan; cook onion, capsicum and chorizo, stirring, until vegetables are tender. Add paprika; cook, stirring, until fragrant.
- 3Meanwhile, rinse and drain beans. Add beans and undrained tomatoes to pan; bring to the boil. Reduce heat; simmer, uncovered, about 5 minutes or until sauce has thickened slightly. Season to taste.
- 4Serve sprinkled with parsley.
