Ingredients

Smoked salmon with capers
  • 320 gram sliced smoked salmon
  • 1 red onion (100g), chopped finely
  • 1/2 cup (90g) drained baby capers, rinsed
  • 2 witlof (110g), leaves separated
  • 2 red radishes (70g), trimmed, sliced thinly
  • 1 baby fennel bulb (130g), sliced thinly
Mustard honey dressing
  • 1 teaspoon dijon mustard
  • 2 teaspoon honey
  • 2 tablespoon lemon juice
  • 1 tablespoon finely chopped fresh dill
  • 1/4 cup (60ml) olive oil
  • salt and pepper, to taste

Method

Smoked salmon with capers

    Divide salmon among serving plates; sprinkle with onion and capers.

    To make mustard honey dressing, place ingredients in screw-top jar; shake well. Season to taste.

    Serve salmon with witlof, radish and fennel; drizzle with dressing.
