Smoked chicken canapes

Smoked chicken canapes
  • 2 medium (250g) witlof
  • 1 smoked chicken breast sliced thinly
  • 1/2 cup (150g) cranberry sauce
  • 2 tablespoon roasted walnuts, finely chopped
  • 2 tablespoon fresh chives, finely chopped

    Cut the end off the witlof and separate the leaves, discarding the large outer leaves. Wash and dry the leaves.

    Just before serving, divide chicken between the leaves; top each with a teaspoon of cranberry sauce. Sprinkle with the walnuts and chives.
