Ingredients

Shortbread buttons
  • 250 gram butter, softened
  • 1/3 cup (75g) caster sugar
  • 1/4 cup (35g) rice flour
  • 2 1/4 cup (335g) plain flour
  • 1 tablespoon caster sugar, extra

Method

    Preheat oven to 150°C/130°C fan-forced. Grease oven trays; line with baking paper.

    Beat butter and sugar in small bowl with electric mixer until smooth. Stir in sifted flours. Knead dough on floured surface until smooth.

    Place 5cm round floured cutter on an oven tray, press one level tablespoon of dough evenly inside the cutter, remove cutter. Repeat with remaining dough.

    Use the lid of a plastic water bottle to indent the buttons. Use a skewer to make holes in buttons. Use a fork to make pattern around edges of buttons.

    Sprinkle buttons with extra sugar. Bake 30 minutes or until firm. Cool on trays.
