Seafood pasta salad

Seafood marinara mix is widely available and very convenient, although you could experiment with all of your favourite seafood morsels.

Seafood pasta salad
  • 1 teaspoon olive oil
  • 1 brown onion (80g), sliced thinly
  • 1 clove garlic, crushed
  • 500 gram seafood marinara mix
  • 375 gram large pasta shells
  • 1 tablespoon dry white wine
  • 1/2 cup (150g) mayonnaise
  • 1 teaspoon lemon juice
  • 2 teaspoon worcestershire sauce
  • 1/3 cup (80ml) tomato sauce
  • 1/4 teaspoon tabasco sauce
  • 1 tablespoon coarsely chopped fresh flat-leaf parsley
  • 100 gram baby rocket leaves

    Heat oil in large frying pan; cook onion and garlic, stirring, until onion softens. Add marinara mix; cook, stirring, about 5 minutes or until seafood is cooked through. Place marinara mixture in large bowl, cover; refrigerate until cold.

    Cook pasta in large saucepan of boiling water until tender; drain. Rinse under cold water; drain.

    Place pasta and combined wine, mayonnaise, juice, sauces and parsley in bowl with marinara mixture; toss gently to combine. Serve seafood salad on rocket leaves.
