Sausages with mash and onions

Sausage and mash is right up there in the pantheon of comfort foods, and this version boasts scrumptious pea and bacon mash with caramelised onions on top. Perfection.

Ingredients

Sausages with mash and onions
  • 3 rindless bacon rashers (195g), chopped coarsely
  • 2 brown onions (300g), sliced thinly
  • 8 thick beef sausages (640g)
  • 1 kilogram potatoes, quartered
  • 1 cup (250ml) milk, warmed
  • 40 gram butter
  • 1/2 cup (60g) frozen peas

Method

    Cook bacon on heated oiled barbecue until browned and crisp.

    Cook onion and sausages on heated oiled barbecue until onion is soft and sausages are cooked through.

    Meanwhile, boil, steam or microwave potato until soft; drain. Mash potato with milk and butter.

    Boil, steam or microwave peas until just tender; drain. Stir peas and bacon through mash.

    Serve mash topped with sausages and onion.
