Sausage sandwiches with bacon chutney
  • 4 leftover cooked sausages, halved
  • 4 eggs
  • 8 thick slices white bread
  • 1/2 cup tomato chutney
  • 1/2 cup diced bacon, fried
  • spinach leaves, sliced tomato, sliced beetroot

    In a large frying pan, heat sausages for 2-3 minutes each side.

    Fry eggs in same pan for 2-3 minutes.

    Top 4 bread slices evenly with spinach, tomato, beetroot, sausage and egg. Dollop with combined chutney and bacon. Sandwich together.
