Method

1.Place flour in a shallow bowl. Whisk eggs in another shallow bowl. Combine breadcrumbs, hamburger helper and parsley in a third shallow bowl.
2.Lightly dust chicken in flour, shake off excess. Working with one at a time, dip floured chicken in egg, then coat in breadcrumb mixture.
3.Spray a 4-hole (2-tablespoon) sausage roll maker with oil; turn machine on.
4.Place four schnitzels in holes; spray with oil. Close lid; cook for 5 minutes. Carefully turn schnitzels over. Close lid; cook for a further 4 minutes or until golden and cooked through. Transfer to a tray; cover to keep warm. Turn machine off for 5 minutes to cool slightly. Repeat with remaining schnitzels.
5.Meanwhile, combine coleslaw mix and mayonnaise in a bowl.
6.Split rolls lengthways along the top, without cutting all the way through. Cut schnitzels in half lengthways; place 2 halves in rolls, then top with coleslaw.

Hamburger helper seasoning mix is a flavour enhancer which contains spices and herb extracts. It is available in major supermarkets.
