Sausage and cannellini bean bake

Sausage and cannellini bean bake
  • 8 thick pork sausages (1kg)
  • 2 brown onions (300g), thinly sliced
  • 400 gram canned undrained diced tomatoes
  • 2 teaspoon finely chopped fresh thyme
  • 420 gram canned rinsed, drained cannellini beans
  • 3 slices white bread, torn into small pieces

    Preheat oven to 220°C/425°F. Cook pork sausages in heated oiled medium flameproof dish, on stove top, until browned. Remove from dish.

    Cook onions in same heated dish, stirring, until browned.

    Return sausages to dish with tomatoes, half the thyme and cannellini beans. Sprinkle bread over sausages with remaining thyme. Bake, in oven, about 15 minutes or until heated through.
