Ingredients: 1 red oak lettuce; 2 baby gem lettuces; 2 peaches or nectarines, sliced thinly; 1 small (120g) red onion, sliced thinly; 1 large avocado; ¼ cup (35g) dried cranberries; ⅓ cup (45g) macadamias, toasted; 1 bunch chives chopped; Dressing; ½ cup (150g) mayonnaise; ½ cup (150g) Greek yoghurt; 2 tablespoons apple cider vinegar; 2 tablespoons honey; 1 tablespoon wholegrain mustard

Ingredients

1 red oak lettuce

1 large avocado

¼ cup (35g) dried cranberries

⅓ cup (45g) macadamias, toasted

1 bunch chives chopped

Dressing

½ cup (150g) mayonnaise

½ cup (150g) Greek yoghurt

2 tablespoons apple cider vinegar

2 tablespoons honey

1 tablespoon wholegrain mustard

Method

1.Arrange the lettuce around a large flat platter. Top with fruit, onion, avocado, cranberries, macadamias and chives.

2.To serve, drizzle over dressing and sprinkle with chives.

3.Whisk all ingredients in a medium bowl. Season with salt and freshly ground pepper.
