Salmon pasta salad
This salmon pasta recipe comes together in a flash thanks to fresh ingredients and canned salmon so you can get a delicious dinner on the table in no time.

Ingredients
- 150 gram wholewheat penne pasta
- 1/4 cup (70g) low-fat plain yogurt
- 1 teaspoon wholegrain mustard
- 1 1/2 tablespoon oil-free Italian dressing
- 1 tablespoon water
- 210 gram canned red salmon, drained, skin and bones removed
- 2 teaspoon rinsed, drained baby capers
- 1 stalk celery (150g), trimmed, sliced thinly
- 1 lebanese cucumber (130g), sliced thinly
- 1 tablespoon fresh dill, finely chopped
- 2 teaspoon lemon rind, finely grated
Method
- 1Cook pasta in large saucepan of boiling water until just tender, drain. Rinse under cold water, drain.
- 2Meanwhile, whisk yogurt, mustard, dressing and the water in small bowl until smooth.
- 3Place pasta in large bowl with flaked salmon, capers, celery, cucumber, dill and rind. Just before serving, drizzle salad with dressing, toss gently to combine. Serve with lemon cheeks.
