Salmon pasta salad

This salmon pasta recipe comes together in a flash thanks to fresh ingredients and canned salmon so you can get a delicious dinner on the table in no time.

  • 150 gram wholewheat penne pasta
  • 1/4 cup (70g) low-fat plain yogurt
  • 1 teaspoon wholegrain mustard
  • 1 1/2 tablespoon oil-free Italian dressing
  • 1 tablespoon water
  • 210 gram canned red salmon, drained, skin and bones removed
  • 2 teaspoon rinsed, drained baby capers
  • 1 stalk celery (150g), trimmed, sliced thinly
  • 1 lebanese cucumber (130g), sliced thinly
  • 1 tablespoon fresh dill, finely chopped
  • 2 teaspoon lemon rind, finely grated

    Cook pasta in large saucepan of boiling water until just tender, drain. Rinse under cold water, drain.

    Meanwhile, whisk yogurt, mustard, dressing and the water in small bowl until smooth.

    Place pasta in large bowl with flaked salmon, capers, celery, cucumber, dill and rind. Just before serving, drizzle salad with dressing, toss gently to combine. Serve with lemon cheeks.
