Salmon fillet with green curry

Sometimes the simplest recipes are truly the best, you'll delight your guests when you serve up these salmon fillets with green curry on a bed of steamed rice.

Salmon fillet with green curry
  • 2 tablespoon green curry paste
  • 4 salmon fillets
  • 1 tablespoon vegetable oil
  • 1/3 cup coarsely chopped roasted unsalted cashews
  • 1/3 cup coarsely chopped fresh coriande
  • 1 teaspoon finely grated lime rind
  • 1 tablespoon lime juice

    First prepare the herb and nut mixture; combine cashews, coriander, lime rind and lime juice in small bowl.

    Rub 2 tablespoons green curry paste into the salmon fillets. Cook fish in heated oiled large frying pan until cooked as desired.

    Serve fish topped with herb and nut mixture.
