Rolled rice porridge
  • 1 1/2 cup (160g) rolled rice
  • 4 1/2 cup (1.125l) water
  • 1/3 cup (80ml) rice milk
  • 1/3 cup (50g) coarsely chopped dried apricots
  • 1/4 cup 1/4 (10g) flaked coconut, toasted
  • 2 tablespoon honey

    Combine rolled rice and 3 cups of the water in medium bowl, Rolled rice porridge. Stand at room temperature overnight.

    Place undrained rolled rice in medium saucepan. Cook, stirring, until mixture comes to the boil. Add the remaining water, bring to the boil. Reduce heat, simmer, uncovered, 5 minutes, or until thickened.

    Divide porridge and milk among serving bowls. Sprinkle with apricots and coconut, drizzle with honey.
