Rocket, chilli & lemon spaghetti
Fresh and peppery, this simple spaghetti is lifted above the ordinary by the use of lemon-infused oil.

Rocket, chilli & lemon spaghetti
- 375 gram spaghetti
- 1/3 cup lemon-infused extra-virgin olive oil
- 1 fresh long red chilli, finely chopped
- 80 gram baby rocket leaves, coarsely chopped
Method
Rocket, chilli & lemon spaghetti
- 1In a large saucepan of boiling, salted water, cook pasta until just tender. Reserve 1 cup cooking water; drain.
- 2Meanwhile, in a large frying pan, combine oil and chilli; heat gently over low heat, 8 minutes or until hot.
- 3Add pasta to the chilli oil in the pan, with reserved cooking water and rocket; stir gently to combine. Season to taste. Serve with lemon wedges if liked.
Notes
Garlic-infused olive oil can be used instead of lemon infused oil. Or add 2 teaspoons lemon zest, finely grated, to regular extra-virgin olive oil.
